Spinach: The New Cucumber

For about a good four years now, I've been quite attached to cucumbers. Particularly in my sandwiches. Over the past 6-12 months, spinach has been sneaking up behind cucumber, and has now surpassed it. I just love spinach salads, and I finally took the jump to replace the lettuce in my sandwiches with spinach. So now rather than going rapidly through cucumbers, I'm buying spinach by the bunch numerous times a week. With a nice poppy-seed dressing, I can eat a lot of spinach in one sitting. I personally think it'll be more a phase than anything, but spinach will always now be high up there in my favourite greens.

Well, I think it was actually my suggestion to put it in sandwiches :)... but, it has a heck of a lot more vitamins etc than lettuce. Though, I still prefer lettuce. And I have nothing against cukes etiher.
